Winemaker's Notes:
The fruit was fermented in our stainless steel Submerged Cap Fermentation Tanks to fully extract every nuanced flavor from the berries. We then aged the wine in French oak barrels. Throughout the process we were careful to minimize harsh tannins, while still providing a solid backbone for ageing potential.
Deeply dark purple in color the wine has an elegant nose that begins with blackberries and an undercurrent of vanilla, with subtle hints of tobacco and anise. On the palate, black pepper weaves in among flavors of cedar, menthol, humus and eucalyptus. The finish is balanced with soft tannins and a lingering dark fruit and mocha finish.
