We then aged the wine in French oak barrels. Throughout the process we were careful to minimize harsh tannins, while still providing a solid backbone for ageing potential.&lt;div&gt;Deeply dark purple in color the wine has an elegant nose that begins with blackberries and an undercurrent of vanilla, with subtle hints of tobacco and anise. On the palate, black pepper weaves in among flavors of cedar, menthol, humus and eucalyptus. It is a blend of Cabernet Sauvignon and Cabernet Franc, from Bordeaux and Syrah and Petite Sirah which come from Rhône.  This wine was challenging to make since each variety has characteristic flavor and mouthfeel which I wanted to preserve in the final wine without compromise.&lt;p&gt;Due Mondi bears the Gallery Collection label which denotes that this is a limited production wine made from premium quality grapes carefully crafted with extra care and attention.  It was aged for 15 months in premium French oak barrels.&lt;/p&gt;&lt;p&gt;The rich dark purple color is complemented with rich aromas of dark berries and hints of spice and chocolate.  In the mid-palate the berry flavors transform to black cherry and the spiciness intensifies. We used our Submerged Cap Fermentation Tank that keeps the berries submerged throughout the fermentation for better flavor extraction and softer tannins.&lt;p&gt;This wine exemplifies the style of wine that I like to create.
