Winemaker's Notes:
The Sauvignon Blanc grape traces its origin to western
France in the Loire Valley and Bordeaux Regions. Its name is derived from "Sauvage" which
means "wild" in French denoting that its origins came from an indigenous
grape. It is interesting to note that
sometime in the 18th century Sauvignon Blanc was paired spontaneously
with Cabernet Franc to parent the Cabernet Sauvignon vine in Bordeaux.
This Sauvignon Blanc comes from our 4 acre Estate Vineyard half
planted in 2011 and the other half in 2018.
This vineyard was planted with the proprietary clone 376 created by ENTAV-ITV,
an official agency certified by the French Ministry of Agriculture that
coordinates the clonal selection program.
There are 4 certified proprietary clones approved by this
organization. One of them is clone
ENTAV-INRA @ 376. We chose this clone
due to its highly intense aromatic qualities and suitability to our environment.
We pressed the whole clusters and fermented the juice at a
very cold temperature of around 55 degrees F that extended the fermentation to
about 30 days. This wine has not
undergone malolactic fermentation to preserve the natural crispness.
This is a crisp and clean Sauvignon Blanc. It possesses distinctive tropical aromas which
extend to the palate adding apple and pear flavors, without the herbaceous and
grassy flavors more typical of California Sauvignon Blanc wines.
