Winemaker's Notes:
The Sauvignon Blanc grape traces its origin to western
France in the Loire Valley and Bordeaux Regions. Its name is derived from "Sauvage" which
means "wild" in French denoting that its origins came from an indigenous
grape. Sauvignon Blanc is now planted in
many of the world's wine regions, producing a crisp, dry and refreshing white
wine. It is interesting to note that
sometime in the 18th century Sauvignon Blanc was paired spontaneously
with Cabernet Franc to parent the Cabernet Sauvignon vine in Bordeaux.
This Sauvignon Blanc comes from our Estate Vineyard which we
planted in 2011. We pressed the whole
clusters and fermented the juice at a very cold temperature of around 55
degrees F that extended the fermentation to about 30 days. This wine has not undergone malolactic
fermentation to preserve the natural crispness.
This is a crisp and clean Sauvignon Blanc with exceptional
aromatic qualities. The distinctive tropical
aromas are blended with apple and pear flavors on the palate. This wine has a firm body and a long finish. This wine doesn't have the herbaceous and
grassy flavors more typical of California Sauvignon Blanc wines.
