The varietals selected for making this dry Rose were Grenache,
Syrah all of which were Estate grown. Grenache and Syrah are traditional varieties
used in Rose in old world wine regions, while using Zinfandel is not very
common. Each component that went into this Rose blend was processed separately
after allowing it to cold soak from a few hours to overnight, depending on the
variety, to extract some of the color and flavor from the skins. When the right color was achieved the must
was separated from the juice and combined with the portion of the red wine from
this lot. The juice was transferred to stainless
steel tanks and kept at 45 - 50 degrees for a few days and allowed to settle. After settling, the juice was racked and
transferred to neutral oak barrels, inoculated and fermented to dryness at
controlled temperature of 60 degrees F.
This is a delicious Rose that has structure, complexity and
balance. Expect flavors of apricot and
pineapple with a crisp and clean lingering finish. It is a perfect wine to enjoy solo or paired
with cheeses and appetizers.
