Notes:
This is our seventh consecutive vintage of high quality Cabernet Sauvignon coming from
our two 2 acre blocks planted with 2 different clones of Cabernet. Like its predecessors, this Cabernet
Sauvignon has distinctive varietal and regional characteristics and lacks bell
pepper flavors. We were able to overcome
the bell pepper flavor by modifying the architecture of our trellis system to
provide shade to the side of the vineyard facing the afternoon sun.
In this vintage we fermented and aged the two different
clones separately. We blended the two
clones along with the other two varietals just before bottling.
This wine was "cold-soaked" for a period of 3 days prior to
fermentation and made in our "Submerged Cap" Fermentation Tank. After the fermentation was completed, this
wine was kept on its skins for a period of 6 weeks for an extended maceration
to maximize the extraction. The wine was
then aged in 20% new French oak barrels for 24 months and continued aging for
an additional year in neutral barrels
This wine has a dark ruby red color with strong aromas of
blackcurrant, blueberry and raspberry. It has a very good balance between the
intense fruit flavors and the body of the wine.
On the palate this wine has nuances of earthy and savory and flavors,
which extend to the long finish.
I attribute the intensity of the flavor and the balance and
softness of this wine to its regional origin.
