Winemaker’s Notes:
This dry Rose wine was made from a blend of Grenache, from the
Davis Vineyards, and from our Estate grown Syrah, Primitivo and
Petite Sirah. After inspection and sorting the grapes were
de-stemmed and crushed, cooled with dry ice to 55 degrees F and
allowed to cold soak from a few hours to overnight, depending on
the variety, to extract some of the color and flavor from the
skins. The must was pressed into a stainless steel tank and cooled
to 45 – 50 degrees F to allow the juice to settle for two days.
After settling, the juice was racked, inoculated and fermented to
dryness at controlled temperature of 60 degrees F.
This is a delicious Rose that has structure, complexity and
balance. Expect flavors of apricot and pineapple with a crisp and
clean lingering finish. It is a perfect wine to enjoy solo or
paired with cheeses and appetizers.
